‘Kay, so?

Kerbey Lane is an Austin institution.

They have everything, anything you could possibly ever want to eat. They offer seasonal treats and abundant veggie-friendly fare.

But that’s not what we’re discussing today. Oh, no. Today we’re talking about the institution at the Austin institution.

I’m not even sure if that makes sense, but logic is low when one’s mind is blown by (drumroll) KERBEY QUESO.

What starts as a humble bowl of guacamole is then doused in delicious queso. Once it reaches the top of the bowl, the cooks dump the freshest pico del gallo over the top. This cheesy, mexicanny monstrosity is then delivered to your table with some delightfully crunchy chips.

And then you get to stir it.

The greens, reds, and oranges swirl around one another  as if in a Van Gough painting. It’s lovely. And it’s delicious.

If you’re feeling super adventurous, get the Cowboy Queso, which adds the goodness of black beans.

Next time you’re in Austin, look up Kerbey Lane Cafe. And even if you aren’t going to Austin anytime soon, it’s time to book a trip.
